Known to gourmets around the world, the fleur de sel de Guérande is particularly prized by Chefs for its violet scent and its white colour. This fleur de sel has long been considered the best in the world, thanks to its authentic know-how, and for the quality of the clay marshes in which the salt crystallizes.

 

In France and around the world it is the best known of the French fleurs de sel.
The fleur de sel de Guérande has been harvested by hand for thousands of years at the foot of the Guérande hillside in Brittany. It is in Brittany Plein Sud, more precisely in Loire-Atlantique, in the Pays de la Loire, that the salt marshes of the Guérande peninsula are located. The Guérande Peninsula, also called the "White Country".

 

The small medieval town of Guérande in Brittany was immortalized in Honoré de Balzac’s novel Béatrix (1839), but in truth its fame comes from its salt. At the foot of the town’s ramparts lies a patchwork of 1,400 hectares of marshland called “œillets” that dates back to around 945.

It is known for its violet taste. It is also appreciated for its purity, a perfect white colour and a very regular fine grain. It is one of the 3 whitest fleurs de sel in France with L’Ile de Ré and Noirmoutier.

"In the mouth, the fleur de sel from Guérande crunches under the tooth and melts under the tongue. Its taste is much less pronounced than an ordinary salt, much milder." It has a very fine iodized flavour and a beautiful length in the mouth, very subtle.

In 2012, it obtained the Protected Geographical Indication (PGI), a European Union identification sign of origin and quality. It also benefits from a Red Label which attests to a high quality approach.

Fleur de sel is a finishing salt, which is put on dishes as a final touch, to preserve the nuanced flavours of the salt and its crystalline texture. Fleur de sel is not to be cooked and must be added off the heat, just before serving.

All fleur de sels are harvested by artisanal salt workers using traditional methods using lousse à fleur. They follow a natural drying process in the sun.
