It is a couple of salt workers on the island of Noirmoutier in Vendée who provide us with this exceptional fleur de sel. Their farm includes 40 harvesting basins called "the oeillets". It is harvested according to ancestral know-how with traditional wooden tools. They passionately respect the manual harvest with the lousse à fleur. This salt does not undergo any washing or treatment and respects a natural drying in the sun.

 

The island of Noirmoutier is a French island in the Bay of Biscay located in the department of Vendée.

Presented in its black casing, this creation is inspired by the history of the name of the island Noirmoutier. The etymology which associates the colour "black" with the term "moutier" (designating a monastery) is of popular origin. In 1150 the island in Latin is called "nigrum monasterium", translate the "black monastery".  Salt has been harvested on this island since 674. When the monk Saint Philbert settled on this island, he founded a monastery there and organized the salt harvest.

With its snow-white colour, these are the most aesthetic and magnificent crystals in the range.


This is our favourite from this collection, if we could say that a fleur de sel is "Chic", it would be this one! Would enhance superbly any dishes (meat or fish).


We often find this fleur de sel on the tables of great Chefs, and in the salted butters of Chefs. This fleur de sel is characterized by its fine, very subtly iodized grain.

Fleur de sel is a finishing salt, which is put on dishes as a final touch, to preserve the nuanced flavours of the salt and its crystalline texture. Fleur de sel is not to be cooked and must be added off the heat, just before serving.

 

artisanal harvest

All fleur de sels are harvested by artisanal salt workers using traditional methods using lousse à fleur. They follow a natural drying process in the sun.
