A culinary delight. Coming from the Ria Formosa National Park on the coast in the South of Portugal, this fleur de sel has the particularity of having a mild taste and a crunchy texture. In this region, salt harvesting is an ancestral activity whose traces of exploitation date back more than 2000 years.

 

Recognizable by its matte white colour and its fine grain, these small crystals are obtained thanks to the sunshine of the location of the salt marshes. The 300 days of sunshine per year are conducive to natural evaporation and therefore to the harvest of fleur de sel. It takes about a year of sun drying to obtain the matte white colour.

 

Known by the greatest Chefs as evidence by the high quality certification awarded by the French association Nature & Progrès, this fleur de sel is a must for lovers of fish, tartares, ceviche and all raw fish and meats.

Fleur de sel is a finishing salt, which is put on dishes as a final touch, to preserve the nuanced flavours of the salt and its crystalline texture. Fleur de sel is not to be cooked and must be added off the heat, just before serving.

 

artisanal harvest

All fleur de sels are harvested by artisanal salt workers using traditional methods using lousse à fleur. They follow a natural drying process in the sun.
