With several millennia of history, the reputation of the city of Aveiro, in the north of Portugal, was built on the canals that cross it, hence the comparison with Venice.

 

Its salt production is also recognized in Aveiro, since it is considered the Portuguese capital of these small crystals.

 

Nicknamed "salt diamond", the Aveiro fleur de sel has a very pronounced white and brilliant colour, of a unique purity. It also has the particularity of having a slight violet scent. Very rich in minerals and containing more than 80 trace elements and marine micronutrients, its harvesting process is entirely carried out by hand in an artisanal way, using the traditional boat "le Mercantil" to transport the salt from the small islands.

 

Thanks to its very fine grain, it goes wonderfully with desserts, sweet and sour dishes, and  quinoa-based dishes.

Fleur de sel is a finishing salt, which is put on dishes as a final touch, to preserve the nuanced flavours of the salt and its crystalline texture. Fleur de sel is not to be cooked and must be added off the heat, just before serving.

 

artisanal harvest

All fleur de sels are harvested by artisanal salt workers using traditional methods using lousse à fleur. They follow a natural drying process in the sun.
